Recently, Petunia joined a CYSA soccer team, which is a more competitive league than she was in before. The team "travels," and their practices run longer and later -- like tonight (Tuesday) when, if we're lucky, we get out of practice at 7 and are home by 7:20 p.m., which is 40 minutes before bedtime. Both kids needed to eat immediately when they walked in the door. Fortunately, I had leftover pasta and meatballs to nuke; I sliced some fruit for dessert, and it was a balanced meal. Going forward, though, leftovers aren't going to cut it; and I swear I've lost a lot of weight since I stopped eating so much Mexican take-out. Happy Meals are great, but not every week (let alone three times per week!). So, what do I cook? For the record, we leave the house at 5 pm for practice. Eating beforehand isn't really an option, especially because Petunia works hard on the field; she'd get nauseous, as I know from experience. I fed her a well-stocked smoothie at 3 to tide her over (yogurt, sweet cherries, honey, milk, and flaxseed oil), but, apparently, that wasn't enough.
So, soccer moms, tell me: what's for dinner? I'd love to get a thread going on quick-to-cook, crockpot, make-ahead, cheat, or quick-assemble recipes. Hot, cold, anything goes ... just not take-out. Help!
